Homemade Granola

Ingredients

  • 4 cups old fashioned oats
  • 1 1/2 cup sliced almonds or whatever chopped nuts you would like
  • 1/2 cup light brown sugar
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup butter or coconut oil
  • 1/4 cup honey
  • 1 tsp vanilla
  • 1 1/2 cup dried cranberries

Overview

This recipe is a favorite that came from a friend many years ago. Thanks Renee! This granola is delicious and great on yogurt or simply as a cereal with or without milk. Feel free to add any other ingredients that you love. You can substitute raisins for the cranberries or add coconut. I love to add some dark chocolate chips after it has baked and cooled. Place on top of yogurt along with your favorite fruit and you have a great healthy dessert. YUMMY!

Instructions

Step 1

Preheat the oven to 300 degrees.

Step 2

In a bowl, stir together the oats, almonds, brown sugar, salt and cinnamon. Then, in a sauce pan heat the butter or coconut oil and honey until it is melted. Remove the mixture from the heat and whisk or stir in vanilla.

Step 3

Pour the liquid over the oat mixture and stir with a wooden spoon….you may have to finish mixing with you hands. 

Step 4

Spread the granola on a baking pan with an edge and line it with parchment paper. 

Step 5

Bake it for 40 minutes, stirring every 10 minutes. Cool on rack on a rack. After it is completely cooled, stir in the raisins or cranberries and whatever else you wish (like the dark chocolate chips or coconut).

Store in an airtight container at room temperature for several weeks or freeze.

Ingredients

  • 1 Beef Roast (4 lbs.) chuck, sirloin or any other favorite
  • 2 Tablespoons olive oil
  • 5 Cwasups of water
  • 1/2 cup of soy sauce
  • 1 envelope of onion soup mix
  • 1 garlic clove minced
  • 1 loaf of french bread
  • 4 tablespoons of softened butter
  • Swiss cheese or any other favorite cheese

Overview

This recipe makes the best beef for French dip sandwiches. I even enjoy eating it without the bread. It can easily be made in the oven or crockpot and the juice is great for dipping. Enjoy!

Instructions

Step 1

Preheat the oven to 325 degrees.

Brown roast in a Dutch oven or oven safe pan in olive oil over medium-high heat until all sides of the roast are browned. Add garlic and sauté for about a minute. Combine water, soy sauce, and soup mix and then pour over roast. Cover and bake in the oven for 2 1/2 hours or until the meat is tender.

After removing the pan from the oven let meat stand for 10 minutes and then slice the meat to desired thickness and return to pan juices.

 

Step 2

Slice the bread in half lengthwise and then cut into sandwich size sections. Spread softened butter over one half of the bread. Place the bread butter side up on a baking sheet and broil in the oven, 6 inches from the heat source, for approximately 2 minutes. Remove your bread from the oven and top it with beef and cheese. Return it to the oven and broil for just a minute or 2 until the cheese is melted. Serve open face or make a sandwich. Serve with pan juices and banana peppers or other toppings as desired.

Step 3

Chocolate Wacky Cake

Ingredients

  • 2 cups sugar
  • 3 cups flour
  • 1 teaspoon salt
  • 1/2 cup baking cocoa powder
  • 2 teaspoons baking soda
  • 2 tablespoons white vinegar
  • 2 cups water
  • 2 teaspoons vanilla
  • 2/3 cup oil

Overview

This recipe was a favorite in my family growing up and still is. My mom told me this cake was originally from the Great Depression years and was also called Dump Cake. Mom’s are never wrong are they? Due to staple items being sparse, substitutions need to be made; therefore the eggs were replaced with vinegar and baking soda, and the butter was replaced with vegetable oil. This trick also works great when converting a recipe to vegan. It also got its name because you literally dump all the ingredients into the bowl and then mix….so simple. When I need to bake a vegan cake for my daughter and son-in-law this recipe is a lifesaver and oh so good. It is one moist cake so enjoy it! I will post a vegan frosting to go along with it. Enjoy!

Instructions

Step 1

Grease a 9×13 cake pan. Preheat oven to 350 degrees.

Step 2

Put all the ingredients into a large mixing bowl. Use an electric mixer and mix until all ingredients are mixed thoroughly. Scrape down the sides of the bowl occasionally as needed during mixing.

Step 3

Put batter into a greased baking pan. Then place it in a preheated oven and bake for approximately 30 to 40 minutes or until a toothpick or cake tester inserted into the center comes out clean.

This recipe will make approximately 24 cupcakes.

Keto Chili

Ingredients

  • 2 lbs ground beef or turkey
  • 1 green bell pepper, finely chopped
  • 1 jalapeno, seeded and finely chopped
  • 2 cloves of garlic, minced
  • 1 (10oz) can of tomatoes with green chilies undrained (Rotel)
  • 1 (15 oz) can tomato sauce
  • 1 (32 oz) carton beef, turkey, or vegetable broth
  • 1 (7 oz) can tomato paste
  • 2 tablespoons of chili powder**
  • 1 teaspoon oregano
  • 1 teaspoon of cumin
  • 1 teaspoon of garlic powder
  • salt and pepper to taste
  • **If you enjoy spicy chili you could increase the chili powder to 3 Tablespoons

Overview

This delicious hearty chili has tons of meat, peppers, and a hearty flavor. It is our family favorite for lower carb, bean-less chili. Still want the beans? Just add some in! Only 8.5 net carbs per serving. 

Prep time: 10 to 15 minutes

Cook Time: 30 minutes

Instructions

Step 1

Brown your choice of meat over medium heat in a larger sauce pan or Dutch oven. Drain off any grease.

Step 2

Add all of the remaining ingredients and stir well.

Step 3

Heat over medium high heat until it starts to boil. Then lower the heat and allow the chili to simmer for approximately 30 minutes until thickened.  Stir occasionally. 

Step 4

Serve with shredded cheese, sour cream, chopped onion or any other garnishes you love.
